Bake with me! Getting prepped for an Easter brunch 🐰 🌸 🐄

It's that time of year again. Time for an Easter bake-athon! I have so many traditions surrounding this time of year so when I got an invite to an Easter brunch, I was a delighted to have an excuse to bust out my favorite treats.


Every year for Easter as a kid my grandmother would make a bunny cake, with coconut as the fur, and the most perfect jello eggs you ever did see. I have yet to master jello, but I did manage to make some adorable fluffy cupcakes! I followed this recipe from goodforyouglutenfree.com for the cake and they turned out pretty well. I think I got my temperatures a bit mixed up and subsituting vegan butter for regular butter may not have been the best idea, but all in all they were yummy. Topping them with frosting, shredded coconut, and lil aesthetic eggs definitely helped!



Though my jello eggs were ultimately a failure, my tried and true dark chocolate PB eggs came through once again! This recipe from rachlmansfield.com is a family favorite and never fails. The one issue I run into is that my blender can't seem to handle all of the stickiness at once. I've found it helpful to blend the dates first (after softening them in warm water) before adding the PB. I think next time I'll try doing half the recipe at a time to see if that goes a bit smoother.




I obviously had to theme my outfit so I went with a favorite chambray jumpsuit, a sweet pastel pink cardigan from my grandmother, and my big flower claw clip! All in all the look was comfy and cute and I had an absolute ball at brunch.
